Copycat Breakfast

I haven't been doing a lot of cooking lately, as I've been eating by myself and cooking for one is no fun. Sunday, I decided to borrow a recipe from one of my favorite foodie bloggers and make a breakfast treat for the week.

I made muffins based on this recipe.

Here are the ingredients I used (not pictured: sea salt and all purpose flower)

As always, my trusty kitchen sidekick was there to laugh at me watch me make a mess support my cooking adventures.


Layer a bit of batter into a muffin pan. I probably could have used a bit more on the bottom than I used. I was afraid of running out of the mixture but the surprise filling seeped out of the bottom of a few of my muffins.
Add filling. I used Smuckers Simply Fruit Strawberry Jelly. Yummo.
Add remaining batter to muffin pan.
Wait for them to cook.
Voila. They were good!

Not exactly "Clean Eating" as they contain sugar and flour, but I used mostly organic products, so they weren't complete rubbish. For muffins, they were relatively healthy, I think.

Week in Recap

This week has been hell a hot mess busy. So busy, in fact, that I have not had a second to myself to sit and write. Whether or not anyone else has missed me, I have missed my daily blogging routine.

Here's a quick recap of the week:

Monday: As an office, we got up obscenely early when the rest of the working world wakes up and made our way down to the Fed Ex Forum to attend the Get Motivated Seminar featuring several famous speakers (including Rudy Giuliani, Colin Powell and Laura Bush). We figured there had to be a "catch" to this seminar as it only cost $10 for the entire office to attend. We didn't know it was going to be a shameless sales pitch pep talk for losers forum for selling wealth management classes and software. I was mildly disappointed until this clown got on stage, at which point, I was disgusted. He was the foulest, most ridiculous a-hole I've ever seen. After several vomit-inducing references to his sex life, followed quickly by references to his faith in God, followed by statements such as, "this lady just wet her Depends," and "if you raised your hand (indicating you think you are perfect) come up here on stage so I can eat your face off," I was so mortified that I could not stop covering my face with my hands. He was truly the worst public speaker I have ever seen. Still the sheep went down to purchase his product. Sick.

That night, I missed a DSAM Board meeting because I missed the multiple emails memo indicating that the meeting wouldn't be held where we normally hold meetings. My phone had died earlier in the day so I had no access to my email or anyone's phone number and I didn't know what time it was. I sat in the conference room by myself until almost 7, at which time I decided something was amiss as the meeting was supposed to start at 6:30.

Monday 1billion, Holly 0.

Tuesday: Work

Wednesday: HIGHLIGHT OF THE WEEK!!

I went to dinner with my college roommates, Ryan, Alexis and Anna, as well as Anna's sweet little girl, Ally, her baby to be and Ryan's baby to be, Louis! C-Bizzle came, too. He has a crush on Ally. She's a cougar. We ate at Newk's and just chit chatted and caught up with each other's lives. It was SO good to see everyone. I love these ladies and am so glad we are still in each other's lives.

C wore his new jeans to the party and had an awesome time.

Rain, Rain, Go Away

Today was a miserably rainy and disgusting. CB and I got pretty stir crazy. Billbo was out of town for the day for a baseball tournament, so we were stuck in the house with nothing to do.



For a while, C-Money entertained himself creeping underneath the bouncy seat and jumper.

"How did I get under this thing?"
"How do I get out from under here?"

C-Note and Berry wanted to go outside, but it was just too rainy all day.
Berry got tired of waiting for the rain to stop, but C-Bizzle remained hopeful.
"Go Away, Rain!"

Finally, C's stir craziness started to get the best of him. When I couldn't keep him out of the fireplace, I decided we needed to get out of the house to do something, rain or shine.

Carter made me do it, Billbowski. How can you say no to that face?
He didn't understand why I let Buster and Berry out but he couldn't go outside with them.
So we went to Target. Oops. I should have known better than to go there as it is impossible to leave without spending the entire contents of your checking account and more.

Like I said, CB made me do it.


Once we got home, C hit the juice.

Clearly, he hasn't learned to handle his drinks.

Maybe I should have some "juice," too.

Danger is My Middle Name

Okay, that is not true. In fact, it is completely false. I hate anything and everything dangerous. I have always been the kind of girl who followed the rules for fear of getting in trouble. I rarely take risks and I do not like to gamble. (I know, this post is making me sound like a superfun rockstar). Safety first.

C-Note has a different idea of fun, it seems. Greeeaaattt.

He wakes up thinking of things to do to make me worry.

"Ahh what to worry mom with next..."
"Perhaps I should try to escape, or at least yank the blinds down on top of me."
"Hmm...not scary enough."
"What if I played with electrical outlets?"
"That's more like it."
"It's so much fun making Mommy run after me as I dive off the bed and reach for the outlets."
Berry is CB's favorite accomplice. Lucky for me, the dogs are worriers, too. Berry is my secret babysitter. My second pair of eyes.



"Wonder if Mom will care if I play in the fireplace."
C-Money is apparently fearless. Here he is, hanging upside down.

Where did he get these daredevil traits?

Definitely all boy, that one. I'm sure I'll give him plenty of embarrassing payback.

The Stinkeye

After an amazing weekend, we were all dreading the return to work today.

C-Bizzle put on his cutest hat yesterday and begged me to stay home with him today.

He couldn't believe it when I said no.
So he pulled out all of the stops, and when he woke up, he had the stinkeye! (Also known as pinkeye, aka conjunctivitis).

When we got to the doctor's office, the pediatrician confirmed my suspicions...it was the stinkeye. Turns out, however, that for safe measures, CB also picked up a little ear infection to go with his pinkeye--just in case I thought about going to work after getting eye drops.

So my poor little buddy spent a lot of time snoozin and crying today. He wanted to be held pretty much all day, which was super helpful while I tried to conduct business from home.

He was not a fan of the eye drops.

"No pictures, please."
I found myself getting frustrated a little while ago, because I was trying to get some things done and I could not get him to settle down so that I could put him down. I finally gave in and just sat down with him to wait it out. He calmed down pretty quickly once I resigned myself to waiting patiently (lesson learned, C$) and he put his hand on mine, wrapping his fingers one at a time over my thumb in a mindless, drumming fashion. It was the sweetest thing in the world, and my annoyance immediately melted away.



I have made no attempts to hide my contempt towards Mondays. This Monday was no different, only I didn't run out of gas. Monday 1000, Holly 0.

At least I got to steal another day away with my little man. Take that Monday, you hateful beeyotch.
